Foley is the process of recreating ambient sounds and noises, like footsteps (not dialogue) in post-production. The technicians who produce these sounds with the aid of various props, are called foley artists or floor walkers.
The concept goes back to Jack foley, during the late 1920's at Universal Pictures when he produced additional noise for a movie for the first time.
